Eggs are just one of those things everyone likes, but no two people like the exact same. This is my fave, and maybe your future favourite, because trust me, these babies are perfection!
Now, my nanny was a fantastic cook, and what I think it was that made her cooking so great was that she always threw everything together with really no rhyme or reason. I take after her with that completely, so here before you is the world's most unorganized recipe to scrumptious eggs. I give the ideas, but it's all on y'all to feel it out yourselves! B~)
-Eggs (duh)
- Green onions
-Any other coloured onion (red, yellow, white, chartreuse, even turquoise!!)
-A tomato (this one is yellow.. who knew those existed?!)
These eggs are free range!!! WOO!
Alright, now chop the regular onion into pieces as big or as little as you prefer!
In this case, I like mine a little bit smaller :~)
And the do the same with the tomatoes and green onions, of course!
Now all you need to do is grab a few spices and start cookin'!
I used my usual combination of celery salt, garlic powder, pepper, sea salt, rosemary, thyme, oregano, and seasoning salt.
Begin frying the onions first so they soften up nicely.
Admire the egg before it goes into your belly. This step is 100% necessary, don't even think twice about it! Also, get a pot of water boiling. That's probably a good thing to do by now!
Once softened, add your tomatoes into the pan, and turn the heat down a bit to make it into like a salsa type thing.
Drop the egg into the pot, and watch the magic happen.
Once the veggies are at the consistency you're into, try them to see if anything is missing. I added some sugar this time!
Once the eggs are out of the bath, cover them in a blanket of seasoning salt. Mmmmm!
Top them puppies off with all of the rest of the ingredients, and BAM! There you have it. Gourmet egg swag.
Now I think I'm going to make some more..
